do you mean putting together samples from 2 different songs or layering 2 parts of the same song on top of each other?
or are you talking about drum samples?

well when i do it i think of each sample as a member of the band that played the song. i single out certain instrument sounds and eq and put effects on them to keep them apart from the rest of the instruments. then i chop them up and arrange them in a new way that makes more sense in hip hop. most of it, you really have to do by ear, it usually just happens in a really creative way. just make sure all the samples are tuned in the same key, make sure they fit together in a way that makes sense in the context of the original song.
there's not really many things you can say about it that are technical, physical things you can do, it all depends on the sample, really. no technique is going to work great every time.

its all about practice, trial and error.

Youd be surprised to find out how many things actually sound good together when you just try it.
